Does trimming damage the content?

No. Cropping only adjusts the page’s visible area (CropBox); the content objects stay intact, and you can re-crop or restore later with the crop tool.

Can I control exactly how much is cropped?

Does a digital signature survive processing?

No. Any change to a signed PDF (merging, compressing, watermarking…) invalidates the existing digital signature — that is the tamper-proof design of PDF signatures, not a limit of this site. Process first, then sign.
